Happy Zoo Year
Hello 2010.
We spent a fun family evening at the Perth Zoo for our New Years celebrations. A picnic of marinated chicken, potatoe salad & greek salad were consumed, followed by my celebration banana cake. The cake was for several reasons, I won a prize earlier, it was New Year's Eve, and it tastes fanfairytastic. I will share this recipe with you, it's by a great Aussie cook Stephanie Alexander. We ate the rest of it at the beach for morning tea on New Years Day. Yummmmy!
Simple Banana Cake
125 g softened unsalted butter
1 1/2 cups sugar
2 eggs
1 cup mashed ripe banana ( I use 2 banana's)
3-4 drops pure vanilla
250 g plain flour
1 tsp bi carb soda
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/2 tsp salt
1/2 buttermilk or 1/2 cup milk and 1 tsp lemon juice
Grease a 20 cm tin, line base with baking paper. preheat oven to 180 degree's.
Cream butter & sugar, beat in eggs, banana & vanilla.
Sift dry ingredients, add alternating with milk.
Spoon into tin, bake for 45 - 50 min, check with skewer before turning to cool.
Lick spoon & bowl before washing
This is lovely plain or ice with icing sugar, hot water & lemon juice, to desired consistency.
Devour with delight.
